Deviled Duck Eggs

Prep - 10 min, Cook - 30 min, Total - 40 min

Ingredients

  • 12 duck eggs
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tsp white vinegar
  • Salt
  • Pepper
  • Paprika

Instructions

  1. Place duck eggs in a pot and cover with cold water by 1 inch (12 eggs)
  2. Bring to a boil over high heat
  3. Once boiling, cover, remove from heat and let sit 12 minutes
  4. Transfer to an ice bath for 10 minutes
  5. Peel eggs carefully (under running water if needed)
  6. Slice eggs in half lengthwise and scoop yolks into a bowl
  7. Mash yolks with a fork, then add mayo, mustard, vinegar, salt and pepper, mixing until smooth and creamy (egg yolks, 1/2 cup mayo, 1 tbsp mustard, salt and pepper to taste)
  8. Spoon filling back into egg white halves
  9. Sprinkle with paprika
  10. Cover and refrigerate until serving (up to 1 day)
