Mashed Potatoes
Prep - 10 min, Cook - 30 min, Total - 40 min
Ingredients
- 5 lbs Yukon Gold potatoes, peeled and cut into chunks
- 1 cup whole milk, warmed
- 1/2 cup heavy cream, warmed
- 1 stick butter, softened
- 8 oz cream cheese, softened
- Salt
- Pepper
Instructions
- Place potatoes in a large pot and cover with cold salted water (5 lbs potatoes)
- Bring to a boil, then reduce to a simmer and cook 15-20 minutes until fork-tender
- Drain potatoes well and return to the pot
- Let sit 1-2 minutes to let excess moisture evaporate
- Mash potatoes
- Add butter and cream cheese, mix until melted and incorporated (1 stick butter, 8oz cream cheese)
- Gradually add warm milk and cream, mixing until smooth (1 cup milk, 1/2 cup heavy cream)
- Season generously with salt and pepper
