1 lb Italian Sausage (mild or hot), casings removed
2-3 cloves garlic, minced
2 cans (15oz each) cannellini beans, drained and rinsed
1 can (14.5oz) petite diced tomatoes with juice
2-3 cups fresh baby spinach
1 1/2 cup chicken broth
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
Salt and black pepper to taste
Grated parmesan cheese for serving, to taste
Bread for serving
Instructions
Heat a large skillet or deep saute pan over medium-high heat. Add the sausage, breaking it up with a wooden spoon. Cook until browned and cooked through, about 6-8 minutes (1lb Italian sausage)
Add teh minced garlic and cook for 30 seconds until fragrant
Pour in the diced tomatoes and broth. Add the Italian seasoning, red pepper flakes (if using), salt and pepper. Stir to combine (14.5oz diced tomatoes, 1 1/2 cups chicken broth, 1 tsp Italian seasoning, salt/pepper to taste)
Add the cannellini beans and bring to a simmer. Let cook for 5-7 minutes to let the flavors meld and liquid reduce slightly (2 15oz cans Cannellini beans)
Stir in the spinach and cook until wilted, about 2-3 minutes (2-3 cups baby spinach)
Taste and adjust seasoning as needed
Remove from heat and serve, topped with grated parmesan and bread (on the side)
